Hasegawa Family Farms is located in Saitama Prefecture, an area known as "Samurai Territory" due to its deep historical ties to Japan's samurai culture. During the feudal era, Saitama was a strategic location for various samurai clans and a key battleground during the Sengoku period. The region's importance is highlighted by numerous castles, such as Oshi Castle, and historical sites in areas like Kawagoe.

GENERATIONS OF CRAFTSMANSHIP

Hasegawa Family Farm, established by the grandfather, is now managed by the third generation—two parents and three sons, with two sons having studied the raising of Kurogo (Japanese Black) Wagyu in college. Known for its craft wagyu due to small production and consistent high quality, the single-origin, vertically integrated farm ensures quality through every stage of the process, including genetics, feed, and animal husbandry. The cattle are birthed and raised on-site their entire lives, unlike most other wagyu brands that source calves from other farms. This minimal-stress environment is crucial for proper marbling, and the family creates unique bonds with the animals, as they spend their whole lives on the farm.

The cattle receive a diet beyond standard grain feeding, incorporating three unique blends.

  1. Sake & beer lees, apple peels, pineapple chips, and rice bran.

  2. Hay with sweet apple juice.

  3. Byproducts from the fermentation of soy sauce, mirin, and sake (nikiri-sauce ingredients).

This proprietary feed creates a robust flavor profile that pairs perfectly with the melt-in-your-mouth texture that chefs love, achieving flavor & texture harmony.

Hasegawa Beef consistently wins awards for its melt-in-your-mouth quality. Two of their many trophies stand out: the Saitama Governor's Award and the Ministry of Agriculture Award.

The Japan Meat Association has recognized Hasegawa Farm's exemplary status, and it will be one of three farms featured in Franck Ribière's upcoming documentary "Steak (R)evolution," alongside Matsuzaka and Yamagata Wagyu.
