The Point.
The main focus of our gathering was to embark on a flavorful journey, comparing the distinctive profiles of Heifer, Steer RIB CAP, and STRIP LOIN. We had the honor of Master Butcher, Guy Crims of The Butcher Shop by Niku, as our grilling expert. And yes, we had a secret weapon: Guy's trusty, hibachi grill.
Our mission went beyond savoring each delectable bite. It was about crafting a narrative, one that weaves together experiences and flavors to resonate with our cherished customers, our vibrant Wagyu community, and even those who are just beginning to grasp the intricacies of this captivating culinary realm. You see, this is why we proudly wear the title of "Wagyu Experts."
The scoring system was based on Taste Preference, focusing on meatiness, tenderness, and that irreplaceable thing called flavor. Not to forget the Visual aspect, where Color and Marbling played their roles in the tantalizing spectacle. The task was delightfully simple: Write down your score, a classic 1 through 10. One being "wtf was that," while ten meant "Someone bury me with this."
The Results.
Looking at the raw data, higher points were skewed towards the more tender striploin cuts. However, the nuanced comments caught our attention; whispers of feedback indicated that the rib caps although delicious appeared to be dancing with a touch of toughness.
Overall, let’s be real, every cut and bite was short of amazing. We appreciate the honesty shared by all, as these insights shape our appreciation for different aspects of Wagyu. These observations guide us on this voyage, steering us toward understanding the intricacies that make each cut unique.
